When buying strawberries, make sure to pick berries that are free of bruises and mold. They will usually last around 4-5 days before starting to break down.

Eating healthy doesn't have to mean giving up flavor and sweetness. When I was working on losing weight and regaining my health, I had a hard time finding healthy alternatives to some of my favorite foods, such as muffins. I love a great muffin for breakfast or as a snack in the afternoon. Everything I found was made with refined flours and sugars and preservatives: all kinds of strange ingredients I couldn't even pronounce and wasn’t sure how they added to the value of the food.
So I started to experiment and came up with this great recipe. I believe simple, clean ingredients are the foundation to a nutritious and delicious recipe. Take the time to bake these and you’ll be eating for wellness and enjoyment!
Fresh Strawberry Oat Bran Muffins
1 1/2 Cups Organic Oat Bran
1 Cup Organic Whole Wheat Pastry Flour
2 tsp non-aluminum baking powder
1/2 tsp cinnamon (optional)
1/2 tsp salt
2 very ripe organic bananas mashed
3/4 Cup organic milk
1/4 Cup honey
1/4 Cup canola oil
1 large egg
1 Cup chopped organic strawberries
1/2 Cup chopped pecans (optional)
Preheat oven to 425ºF. Fill a 12-count muffin tin with unbleached muffin cups or oil each cup with a little canola oil.
1. Combine the first five ingredients in a small bowl and stir until well blended
2. Combine bananas, milk, honey, oil, and egg until well blended in a large bowl.
3. Pour flour mixture into liquid mixture and stir just until moistened.
4. Fold strawberries in slowly and carefully until just combined
5. Using a 1/4 measuring cup, scoop batter into muffin cups.
6. Bake for about 12-15 minutes or until tops are lightly browned.
Makes 10-12 muffins. Store in an airtight container for 3 days.
